Job Description
We are seeking a skilled Chef de Partie (CDP) with expertise in Modern Chinese cuisine to join our premium dining team at Philippe Chow, Kuwait. The ideal candidate should have strong experience in Beijing-style and Hong Kong-inspired cooking, exceptional wok skills, and the ability to prepare authentic Chinese specialties while maintaining the highest standards of quality and presentation.
Key Responsibilities
- * Prepare and cook authentic Modern Chinese dishes in accordance with established recipes and quality standards.
- * Execute high-heat wok cooking with speed, precision, and consistency.
- * Prepare premium dim sum, dumplings, bao, handmade noodles, and other specialty Chinese dishes.
- * Produce signature roasted specialties, including Beijing Duck and lacquered meats.
- * Develop and execute authentic sauces, marinades, and seasonings.
- * Ensure consistency in taste, texture, presentation, and portion control.
- * Maintain high standards of cleanliness, food safety, and hygiene in compliance with HACCP guidelines.
- * Coordinate with the Sous Chef and Executive Chef to ensure smooth kitchen operations.
- * Monitor ingredient quality and report shortages or quality concerns.
- * Minimize food waste and support inventory control initiatives.
- * Train and support junior kitchen staff as required.
- * Maintain a clean, organized, and efficient workstation throughout service.
Requirements
- * Minimum 3–5 years of experience as a Chef de Partie (CDP) or in a similar role within a premium Chinese or fine-dining restaurant.
- * Strong knowledge of Modern Chinese cuisine, particularly Beijing-style and Hong Kong-inspired dishes.
- * Expertise in high-heat wok cooking and seasoning techniques.
- * Hands-on experience in preparing dim sum, dumplings, bao, and handmade noodles.
- * Experience in preparing Beijing Duck, roasted specialties, and lacquered meats.
- * Strong knowledge of Chinese sauces, marinades, and flavor balancing.
- * Excellent food presentation and plating skills suitable for luxury dining.
- * Good understanding of HACCP and food safety standards.
- * Ability to work efficiently in a fast-paced, high-volume kitchen.
- * Strong teamwork, communication, and time management skills.
