The Porotta and Dosa Maker is responsible for preparing and cooking authentic South Indian flatbreads and dosas, ensuring high standards of taste, texture, and presentation. This role requires expertise in traditional cooking techniques and a deep understanding of regional flavors.
Dough Preparation: Mix flour, water, salt, and other ingredients to prepare dough for porottas. Knead the dough to achieve the desired consistency and texture.
Rolling and Folding: Roll out portions of the dough into thin circles and fold them to create layers, ensuring the characteristic flakiness.
Cooking: Cook the folded dough on a hot griddle, applying ghee or oil, and cook each side until golden brown and puffed up.
Quality Control: Monitor the cooking process to ensure that porottas are cooked evenly and thoroughly.
Quantity Management: Estimate the quantity of porottas needed based on customer orders and kitchen requirements.
Batter Preparation: Prepare dosa batter by mixing appropriate proportions of rice, lentils, and other ingredients, ensuring consistency and quality.
Cooking: Expertly spread dosa batter onto a hot griddle, ensuring even thickness and cooking it to perfection. Flip when necessary to achieve desired texture and color.
Variety of Dosas: Prepare a variety of dosa variations including masala dosa, plain dosa, cheese dosa, and other specialty dosas according to the restaurant's menu and customer preferences.
Accompaniments: Prepare dosa fillings and accompaniments such as potato masala, chutneys, and sambar, ensuring they are fresh, flavorful, and presented attractively.
