The Chef specializing in Malabar Cuisine is responsible for preparing and presenting traditional dishes from the Malabar region of Kerala, known for its rich flavors and unique cooking techniques. This role requires a deep understanding of Malabar culinary traditions, including the use of regional spices, seafood, and rice-based dishes.
Design and update the menu to showcase authentic Malabar dishes such as Thalassery biryani, Kallummakkaya (mussels) curry, Erachi (meat) Puttu, Parotta, and Pathiri.
Incorporate seasonal ingredients and regional specialties into the menu.
Prepare and cook a variety of Malabar dishes, ensuring consistency and high-quality standards.
Utilize traditional cooking methods, including dum (slow cooking) techniques, to enhance flavors.
Source authentic Malabar ingredients, including Kaima rice, coconut oil, and local spices.
Maintain inventory levels and order supplies as needed to ensure the availability of key ingredients.
Regularly taste dishes to ensure consistency in flavor and presentation.
Collaborate with the front-of-house team to ensure a seamless dining experience for guests.
