The Malabar Cuisine Chef is responsible for preparing and presenting authentic Malabar dishes, ensuring the rich culinary heritage of the region is maintained. This role requires expertise in traditional cooking techniques, a deep understanding of regional spices, and a passion for delivering high-quality, flavorful dishes.
Traditional Dishes: Prepare and cook a variety of Malabar specialties, including:
Malabar Biryani: Utilizing jeerakasala rice and traditional dum cooking methods.
Parotta & Pathiri: Mastery in making soft, flaky parottas and rice pancakes.
Seafood Delicacies: Dishes like kallummakkaya (mussels) curry and prawn fry.
Meat Dishes: Erachi puttu, mutton stew, and other regional meat preparations.
Snacks & Sweets: Unnakkaya, pazham nirachathu, muttamala, and chattipathiri.
Spice Blending: Create and use fresh, hand-ground spice mixes, emphasizing ingredients like fennel seeds, cardamom, cinnamon, and cloves .
Recipe Innovation: Develop new dishes while preserving traditional flavors.
Seasonal Specials: Introduce seasonal dishes based on local ingredients and festivals.
Guest Preferences: Adapt dishes to cater to diverse guest preferences without compromising authenticity.
